Tasting note

WINEMAKING PROCESS:

Selected grapes are fermented in stainless steel tanks with temperature control and maceration of the pulp until a wine with a suitable structure for aging is obtained.

AGING:

Stored in American oak Bordeaux barrels for 13 months followed by at least 3 months aging in bottle.

TASTING NOTES:

COLOUR. Good layer of colour, with high intensity and ruby red tones and well-assembled terracotta edges; a uniform, persistent tear with a grease-like appearance.

AROMA. Clean, fragrant and intense with hints of liquorice and red fruits. Ripe red fruit and jam flavours appear in the background; as the wine begins to breathe, hints of coffee and vanilla appear in a cloud of balsams.

MOUTH: Smooth, sticky attack, very warm and meaty with a long, firm passage. Very well assembled alcohol-acidity and very good tannins.

AFTERTASTE: The hints of liquorice we noted on the nose appear again and the strength in the mouth increases, as befits a serious wine, making a long life in the bottle seem likely.

PAIRING:

Perfect companion for Mediterranean cuisine: roasted or grilled red meats, pulses, fish in tomato sauce, grilled vegetables, sausage meats, pates and semi-aged cheeses.
