Winemaking:

The grapes are first carefully selected in the vineyard and then cold macerated before fermentation is carried out at a controlled tem- perature, with daily micro-oxidation to maintain all the natural fruit of the grape. Some of the wine undergoes malolactic fermentation in barrels.

The Gran Reserva is stored in French oak barrels for about 18 months where it matures perfectly thanks to a careful racking from barrel to barrel.
