The long maceration extracted the maximum potential from the skins of the Syrah grapes, which mature perfectly in this microclimate. The wine was biologically stabilised over five months and after the winter cold transferred to oak Allier barrels for 14 months until it acquired the desired complexity. Bottled at the end of its second winter. Serve at 18°C.
