The Vino da Messa is made by natural over ripening in the vine of the grapes used. Some of the grapes are further dried on wooden boxes. The greatest consequence of the over ripening of the grapes is that grapes become dry and the loss of weight which can vary from 30 to 45%, with an increase of the sugar content and various other elements. The aging takes place in Allier oak barrels - with a variable capacity from 225 to 500 litres - for a period that goes from 18 to 48 months.

Rich nose with scents of raisins, honey, fig, almond, apricot and peach. In the mouth it shows a full body and long persistence. The Vino ottenuto da uve appassite bianco increases in elegance after a few years of aging.

Ideal combination with desserts made of jam, dried fruits, candies, spices and baked biscuits. Perfect with cheese, specially aged and piquant.
